When making lasagna do your edges of the pasta always ends up hard? Do you have to boil it first? I have got a tip, don’t let the pasta sheets touch or touch the edges of the dish (this makes it stick, become hard and dry out). Cover the sheets with plenty of sauce too, that way the pasta cooks. (chefs never tell us this cause they think we already know this stuff) We don’t!!! and as mummies (and daddies) we don’t have time to be messing about with pasta!! (we are to busy solving the worlds problems like, how not to stand on lego in our bear feet!!!) (painful).. there’s lots of hidden veg in there too … so get stuck in enjoy and have fun xx oneyummymummy xx
Note: any mummy’s or daddies doing slimming world this lasagna serves 6. the syn value per portion is 2 using water instead of milk!! using the cheese as your hex a. (and so worth it)……
Healthy Mummies and Daddies = healthy kiddies xxx
- 500 g pack of extra lean mince beef
- 1 carrot
- 1 onion
- 2 cloves of garlic
- 1 courgette
- handful of chopped mushrooms
- carton of passata
- tablespoon tomato puree
- tablespoon of Basil
- tablespoon to oregano
- teaspoon of thyme
- teaspoon of Cinnamon
Pre heat oven at 180C gas mark 4. Grate your carrot, onion, garlic ,courgette and chop the mushroom into small pieces Put tin a large pan (I use a wok) on a medium heat. Add the mince to the veg together with the garlic and mushroom and brown.
Drain the fat off the mixture with a sieve.
Add passata , tomato puree, herbs and Cinnamon and leave on a low heat while you make your white sauce.
Mummy’s white sauce
Melt butter in a saucepan and add the flour and whisk until the butter and flour has stuck to the whisk (don’t worry about this it will work out)
On a medium heat slowly add a quarter of the liquid and whisk until its thick with no lumps whisking for around 5 mins.
Add another quarter of the liquid and whisk for 5 mins.
Add the remainder and keep whisking on a medium heat until the sauce is creamy looking with no lumps . Turn the heat down and simmer. Simmer for 5 mins (if u do have lumps sieve them I won’t tell any one!!! And the kids won’t know)
Now to layer up.
First put a spoon of the meat mixture on the bottom, then the sheets of pasta (making sure the pasta isn’t touching or touching the edge)
Completely cover the pasta with the meat mixture. On top of this add more pasta. Cover the pasta again with the meat mixture and then top off with mummy,s white sauce.
Finish off by scattering small balls of mozzarella and a sprinkle of your favorite grated cheese.
Put in the oven for 35 minutes!!! a work of art!!! have fun xx
