Chicken And Sweetcorn Noodles

Hey yummy mummies and daddies,

Every kid I know loves noodles! But did you know the sachet packets are all sodium, oil and full of MSG’s… that’s why kids love them!!
This recipe is super easy with no hidden nasties. Perfect for a quick lunch and you know exactly what’s gone into them (I think they taste better than the instant ones too)

Ingredients (serves 4 children)
  • 2 packs of plain dried noodles
  • 3 chicken breasts
  • small tin of sweet corn
  • 1 teaspoon garlic powder
  • 1 tablespoon light soy sauce
  • 1 chicken stock cube (you can use the low salt one if you wish)



Oven bake the chicken at 180c gas mark 4 on a tray covering it with tin foil for 25 mins  ( This way the chicken is tender and easy to chop. I also think the kids prefer it like this rather than fried).  Soak the noddles in boiling water for 10 minutes.  After the 10 minutes drain and spray with a few sprays of olive oil and leave until the chicken is done.  Chop chicken into small bite size pieces, spray a pan with olive oil and put on a medium heat.  Add the noodles, chicken and sweetcorn to the pan.  Crumble over your stock cube, add garlic powder, soy sauce and stir for 5 mins and serve!!!
